Ingredients
- 2 cups day-old cooked rice
- 2 tbsp jollof tomato base (see Jollof recipe)
- 2 eggs, beaten
- 1 tbsp soy sauce
- 1 tsp sesame oil
- Mixed vegetables (peas, corn, carrots)
- Spring onions
- Chilli flakes
Method
- Heat a wok on very high heat until smoking.
- Add oil, then the beaten eggs — scramble quickly and push to the side.
- Add the cold rice, pressing it flat against the wok. Let it sit for 1 minute to get a slight char.
- Add jollof tomato base, soy sauce, and sesame oil. Toss everything together vigorously.
- Add vegetables, season with chilli flakes and salt.
- Finish with spring onions and serve immediately.
