Jollof Fried Rice Fusion Bowl

What happens when Ghanaian jollof meets Asian fried rice technique? This fusion bowl is the answer — smoky, umami-rich, and absolutely addictive.

Jollof Fried Rice Fusion Bowl

Ingredients

  • 2 cups day-old cooked rice
  • 2 tbsp jollof tomato base (see Jollof recipe)
  • 2 eggs, beaten
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • Mixed vegetables (peas, corn, carrots)
  • Spring onions
  • Chilli flakes

Method

  1. Heat a wok on very high heat until smoking.
  2. Add oil, then the beaten eggs — scramble quickly and push to the side.
  3. Add the cold rice, pressing it flat against the wok. Let it sit for 1 minute to get a slight char.
  4. Add jollof tomato base, soy sauce, and sesame oil. Toss everything together vigorously.
  5. Add vegetables, season with chilli flakes and salt.
  6. Finish with spring onions and serve immediately.
