Miso-Glazed Plantain

Ripe plantain meets Japanese miso in this unexpected but deeply satisfying side dish. Sweet, salty, umami — it works in ways you wouldn't believe until you try it.

Miso-Glazed Plantain

Ingredients

  • 2 ripe plantains (yellow with black spots)
  • 2 tbsp white miso paste
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • Sesame seeds and spring onions to garnish

Method

  1. Preheat oven to 200°C. Slice plantains diagonally into 1cm pieces.
  2. Whisk together miso, honey, rice vinegar, and sesame oil to make the glaze.
  3. Toss plantain slices in half the glaze and arrange on a lined baking tray.
  4. Roast for 15 minutes, then brush with remaining glaze and roast for another 5 minutes until caramelised.
  5. Garnish with sesame seeds and spring onions. Serve immediately.
