Ingredients
- 2 ripe plantains (yellow with black spots)
- 2 tbsp white miso paste
- 1 tbsp honey or maple syrup
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- Sesame seeds and spring onions to garnish
Method
- Preheat oven to 200°C. Slice plantains diagonally into 1cm pieces.
- Whisk together miso, honey, rice vinegar, and sesame oil to make the glaze.
- Toss plantain slices in half the glaze and arrange on a lined baking tray.
- Roast for 15 minutes, then brush with remaining glaze and roast for another 5 minutes until caramelised.
- Garnish with sesame seeds and spring onions. Serve immediately.
